Sweet Cinnamon Zucchini Bread
Ingredients
- 3 cups all-purpose flour or whole wheat flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 tablespoon cinnamon
- 1/4 teaspoon baking powder
- 6 egg whites (or 3 whole eggs), beaten light and fluffy
- 1/2 cup canola oil
- 1 1/2 cups brown sugar
- 2 cups grated unpeeled zucchini
- 2 teaspoons vanilla
Directions
- Preheat oven to 325°F.
- Whisk together flour, salt, baking soda, cinnamon, and baking powder in a large bowl.
- In another large bowl use an electric mixer to beat egg whites, canola oil, brown sugar, zucchini, and vanilla.
- Add the dry ingredients to the wet, and use a wooden spoon to mix just until blended.
- Pour batter into two non-stick loaf pans sprayed with cooking oil. Bake for about 1 hour or until a toothpick
inserted into the center of the loaf comes out clean. Cool on racks.
