Sweet Cinnamon Zucchini Bread



  1. Preheat oven to 325°F.
  2. Whisk together flour, salt, baking soda, cinnamon, and baking powder in a large bowl.
  3. In another large bowl use an electric mixer to beat egg whites, canola oil, brown sugar, zucchini, and vanilla.
  4. Add the dry ingredients to the wet, and use a wooden spoon to mix just until blended.
  5. Pour batter into two non-stick loaf pans sprayed with cooking oil. Bake for about 1 hour or until a toothpick inserted into the center of the loaf comes out clean. Cool on racks.
