Buttermilk Pancakes


*sour milk substitution: for each cup of sour milk needed, place one tablespoon of lemon juice or vinegar in a glass measuring cup. Add enough milk to make one cup of liquid in total, then stir. Let stand 5 minutes before using.


  1. In a large bowl, mix flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, mix eggs, milk, and oil.
  3. Make a well in the dry ingredients; add wet ingredients all at once and mix just until combined (batter should be lumpy.)
  4. Cook on one side until the edges are set and the pancake is bubbling, then flip. Cook until golden brown.
